Crispy Potato Cakes with Rosemary

This is a great way to use up leftover mashed potatoes - and they are delicious too!  This recipe for crispy potato cakes with rosemary are perfect for breakfast, lunch, or dinner.

What You'll Need

  1. 3 tablespoons of olive oil 
  2. 1 1/2 cups of chopped onion 
  3. 1 tablespoon of finely chopped rosemary 
  4. 3 cups of leftover mashed potatoes 
  5. 1 cup of bread crumbs 
  6. Salt Pepper


What You Do

  1. In a medium skillet over medium-low heat, heat 1 tablespoon oil. Add onion, rosemary, and 1/2 teaspoon each salt and pepper and cook until onion is soft and golden (about 7 minutes). 
  2. Transfer to a large mixing bowl, add potatoes, and mix. Sprinkle with salt and pepper. 
  3. Spread bread crumbs in a shallow dish. 
  4. In a large skillet over medium-high heat, heat 1 tablespoon oil. 
  5. Using a 1/3 cup measure, form potato mixture into 12 cakes. 
  6. Gently press bread crumbs on both sides of each cake. 
  7. Cook cakes in batches (adding more oil as needed), turning once, until golden brown and heated through, about 8 minutes.
